so basically, eat more unheated extra virgin olive oil? Seems easy enough.

Except that 40% of all extra virgin oil is not.  Lots of fraud going on. 

PERHAPS that sharp taste at the back of your tongue indicates the real stuff.

Could you elaborate on your feelings on what kind of olive oil to get?  It's my go-to cooking oil (though I'm trying to include butter & bacon grease, as well as hopefully some other things like coconut oil or whatever else folks here recommend).

I don't usually cook with it, but I love to eat the super dark green stuff raw on bread and salads.
I get the fancy stuff, not because I'm a foodie but because I've read numerous articles about the swill on supermarket shelves.
