The audio quality sounds excellent, Craig.  What kind of mic are you using?

I put the whole thing on a pile of books in front of me on my desk to get it directly in front of my mouth when talking. I am going to purchase a boom for the whole thing shortly because it will allow me to work with the mic more easily.

I run the audio through Apple's Garage Band and am currently applying a Noise Gate, Bass Amp, mild compression and speech enhancer filters (for narrators) to the audio. This cut out some background noise and enhanced the audio spectrum so my voice sounds clearer.

Any audio engineers out there with tips to improve audio quality, please let me know. I'm still learning.

Yeah I will be slowing down. I wanted to get a few shows out quickly so I can work out audio issues, etc. I'm not sure what the ultimate schedule will be.

That's pretty cool. 

I just bought the Blue Yeti USB mic, last month.  It's about the same price.  Looks really cool, like one of the old '50's retro mics.  I'm pretty happy with it, but definitely need to buy the pop filter.  I've been using it with iMovie, for the dog training videos.  If you haven't yet, I'd be cautious about upgrading to iLife '11.  (Probably off topic.)

I saw that mic as well. Both got great write-ups but I think the AT2020 was smaller which suited me. It's a toss-up really. I haven't upgraded yet. If you have GarageBand/iMovie tips feel free to post them in the Other Discussions area. Nothing is off topic there.
