I don’t yet have one for the pork-daikon stew. My ex used to make it. But, after I’ve fully woken up, I’ll post something even better: Pork Shoulder with Chinese Flavors.

Re: Simple, Healthy, Delish Recipes
as promised: Short Ribs w/ Chinese Flavors
{ I get most recipes from his book, How to Cook Everything: The Basics, but this one is from the net, probably the NYTimes.
I have done it with beef short ribs, for which he wrote the recipe; and with pork shoulder; and with a chicken leg & thigh...
No, you don't need to add extra liquid unless you like boiled meat.
I got the green Sichuan peppercorns from Amazon. }
INGREDIENTS
8 short ribs, about 3 pounds
½ cup soy sauce
¼ cup sugar or honey
3 star anise
6 scallions, trimmed
1 3-inch piece cinnamon
5 nickel-size slices of ginger
1 teaspoon Sichuan peppercorns
Salt
Cooked white rice for serving
Chopped scallions or fresh cilantro leaves for garnish
PREPARATION
Combine all ingredients, except salt, rice and garnish, in slow cooker. Cover and cook until meat is very tender and falling from bone, 5 hours or more on high, 7 hours or more on low. Taste and add salt if necessary.
If you like, remove meat, strain liquid and refrigerate meat and liquid separately; skim fat from liquid, and reheat with meat. Serve hot over white rice garnished with scallions or cilantro.

Re: Simple, Healthy, Delish Recipes
Tortoise, I’m curious about the mulled wine that you mentioned in ‘Signatures’.
Is it anything like this? https://www.gimmesomeoven.com/mulled-wine-recipe/
How did the cherry whiskey come out? Tasty?
The recipe in the post above is the reason for my sig. I made it today, and it looks like I posted that exactly a month ago.
(Except I roasted red bliss potatoes with herbs this time).
EDIT: he answered by pm. The rest of you will have to wonder.

It’s slow cooker weather. I made duck tacos and most of the cooking was done overnight in the slow cooker.

I am making pancakes today. I've been trying to find a good mix for protein pancakes, but they've all turned out to be either mealy or just super expensive. I've settled on just cracking a couple eggs into regular mix to let them live up to the "protein" moniker.
Apparently rice cooker pancakes are a thing, which I will experiment with next.

huh, I thought you couldn't sleep because it made you hungry!MangoMan wrote: ↑Wed Feb 03, 2021 1:43 pmThe aroma. I used to have a George Foreman grill, but had to get rid of it bc when I'd make a burger for dinner, the smell would get into the vents or something, idk, but I'd wake up at 2AM and want to puke from the smell. Same if I have a rare house guest who brews coffee at weird hours.

Those look great. I made Korean scallion pancakes (pajeon) a couple weeks ago. Simple and delicious. With homemade kimchi inside. Not very full of protein besides the eggs. But, you could put seafood in them. They’re great with shrimp if. you’re allowed to eat that kind of protein.Smith1776 wrote: ↑Wed Feb 03, 2021 12:53 pm I am making pancakes today. Oooooh, I've had those before, but not in years. One of my friends has a whole custom Korean BBQ setup in his house. I'll have to try that next time we hang out. (Who knows when that will be, though.)dualstow wrote: ↑Wed Feb 03, 2021 2:19 pm

They're very easy to make. No exotic ingredients. You can even get premade batter at places like HMart.
Oh, if I had the space for Korean BBQ setup....

I slow roasted a duck in the oven a few days ago. It came from a local farm and looked wonderful. Turned out it had hardly any meat on it...sigh...but the meat was delicious. I went the Julia Child route and made cranberry apple chutney to go with it, along with brussels sprouts.
The carcass went into the slow cooker for a rich, wonderful bone broth. It supplied mugfuls of beverage while it was cooking and then part of it became a rather wonderful soup.
'Tis the season indeed! I love love love this time of year. Winter doesn't last nearly long enough! Once summertime hits, I basically live on hamburgers and salad.

That sounds great, WiseOne. I would love to cook a whole duck instead of just the breast.
Thank you for reminding me I have cranberries sitting around. I should make muffins.

Re: Simple, Healthy, Delish Recipes
I made a weeks worth of my slow cooked chicken and rice. Instead of my typical condiment rotation (BBQ+Sriracha, Butter Chicken, or Tikka Masala) I'm going with the Costco Spice Island garlic and herb seasoning, which I've found is pretty delicious. I put a fast food amount on it.
You there, Ephialtes. May you live forever.

Re: Simple, Healthy, Delish Recipes
Another thing to like about getting whole birds to roast: the giblet package.
I share the giblets with my cats. They get the gizzard, some liver, and half the heart (scissored up and fed raw). They love it. The rest becomes breakfast. I cook a slice or two of bacon, then add the liver & heart (also cut up) plus some chopped onion or onion powder, salt & pepper it generously, saute a couple of minutes, then add an egg to the pan. A little balsamic vinegar drizzled on the giblets is nice too.
This tastes a lot better than it sounds and is a very easy way to eat liver & offal, plus it's the most wonderfully satisfying breakfast ever. I've tried cooking liver & onions for dinner and I'm not a fan. I do this instead. Also I chop up some liver (easiest if partly frozen) into meatloaf. About 1/8 - 1/4 lb per pound of ground beef is a good ratio. And D'Artagnan makes a really wonderful (though pricey) peppered liver mousse.

D'Artagnan is the brand of duck breast I buy. It's all that I see at the store, and it's consistently great. They have all kinds of interesting offerings that I want to try, like wild boar sausage.

Re: Simple, Healthy, Delish Recipes
Finally baked my own bread with not much more than flour, milk, and a packet of instant yeast. I had no idea how easy it would be. If anyone wants the recipe...
This is just sandwich bread, nothing fancy. And yet, it’s so much more satisfying than the sliced store-bought stuff.

I made my first bread with the first VitaMix I bought in 1985.
You start with the wheat berries which you grind to flour with the Vitamix, letting you start with the freshest flour possible. I think the only ingredients were those wheat berries / flour, salt, and that same type of yeast you cited above.
The bread was so delicious, tasting like cake, that I'd almost eat half of it as soon as it was done.
Above provided by: Vinny, who always says: "I only regret that I have but one lap to give to my cats." AND "I'm a more-is-more person."

Your guess is as good as mine. I'm using a boxed powder that is premixed. Not very gourmet, but it does the job hehe.
