Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

Also, I don't want to give the impression that I don't eat steak. I do! I just don't eat a ton and I eat it with traditions (see a French cookbook for traditional sauce pairings and side dishes that are meant to bring balance to the meal by incorporating other whole foods). Your tastebuds are there ...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

Does anybody have a good source for whole wheat bread and pasta made with stone ground flour that isn't too expensive? Alvarado Street bakery makes a quality source of whole wheat bread—available in your organic freezer section or fresh from Trader Joes under their own brand name (you have to ident...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

Gumby, I try to do most of my learning via podcast now.  I LOVE Chris Kresser's.  Is there anyone you'd recommend following that reinforces your new model of risks and advantages of various food types? I appreciate all these studies and journals, but I need someone like Kresser (and you haha) to di...

Re: Permanent cookware

FWIW, I'm pretty much with you ... I perhaps have a slightly more tolerant view of food and chemicals than you since I'm a chemical engineer - and old I agree. Most awful chemicals in low doses are actually hormetic. Edward Calabrese has some amazing lectures on how low exposure to harmful chemical...

Re: Permanent cookware

So if you aren't making spagetti sauce, or other acidic stuff (what else that people commonly eat is acidic?) perhaps the best is just good ol stainless steel? I think despite nickel, most experts aren't particularly worried about stainless. I'm still going to use stainless for the simple fact that...

Re: Permanent cookware

I inherited some Copco Cookware pans (from Denmark) that is cast iron covered with white porcelain enamel. They were purchased decades ago and never been used, but hadn't ever touched it because I assumed it was too fragile. Will probably start using it for my morning eggs! [align=center] http://sta...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

I've been looking into this a bit today and I've not found serious concerns (yet) over nickel in stainless. Mostly seems to be nickel-sensitive people and allergy. For instance (not saying this is reliable or not): What is the healthiest type of cookware? "What some cite as a concern for stainless s...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

I love using a cast iron Dutch oven for camp cooking. I might ban the use of cast iron at home and move to stainless based on what I'm seeing here. Not a bad idea. But it depends on the dish and how much you move the food around in the pan. For instance, I'd still cook cornbread in cast iron. From ...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

Indians had worn out teeth from a steady diet of stoneground corn.  Everything in moderation.  Have you investigated the consequences of too much silica in the regimen?  ;D Yes, the grit from the grindstones were a huge problem for early cultures. Most of the poor dental records and related health ...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

I didn't know about this problem. It looks like if you get "stone ground" whole wheat flour, it's not an issue, and it's the "roller mill" process that chops up the wheat and reassembles it.  You can get stone ground whole wheat flour at every health food store I've ever seen. I wonder if there's a...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

What Gumby said is that a lot of whole wheat flour is actually refined wheat with nutrients and supplements added back in to (supposedly) restore it to the nutritional level of the original. In other words, "whole wheat flour" is not actually legally required to be "whole wheat" but rather can be "...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

Is it healthier though?  Is everyone touting the benefits of coconut oil (something about MCT's right) really full of it? Well, I doubt either fat is problematic in low quantities. The reason the low carb community is so choosey about their fats is because they have to eat a lot. If you think about...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

Hah, yikes! So… is this a good thing or a bad thing? Or is preferring butter more of a "whole foods vs processed foods" thing? I do really like the nice bright yellow imported Irish Kerrygold butter that Costco sells. I kinda doubt the short temporary intestinal permeability is a bad thing. It's li...

Now you're going to tell us that coconut oil is bad too! Say it ain't so! I don't use coconut oil anymore. I prefer butter. It occurred to me that the low carb and anti-grain movement was built on bullshit when they told us that gluten was bad because it supposedly promoted intestinal permeability,...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

I'd also point out that even compounds like phytic acid—what we here once feared as being an "anti-nutrient" is now known to have beneficial health properties. It may be related to the fact that phytic acid is believed to chelate excess "free" iron in the bloodstream and tissues. New hypotheses for ...

1) What are the main fundamental reasons one should eat grains when we can get resistant starch and micronutrients from other sources? There is no requirement to eat grains. You can do well without them—it's just a little more challenging (i.e. eating lots of potatoes and greenish bananas). For ins...

Also.. few people seem to realize that Durum wheat is an "ancient" wheat. So, if you really bought into the weak "modern" wheat theory, you shouldn't have any problem with non-adultured and non-enriched 100% Durum wheat—that is commonly found in European or homemade pastas: Wikipedia: Durum Wheat Du...

Historical documents were talking about historical wheat which is very different from wheat  today, no? Hi Benko! Nice to hear from you. In my research, and in talking with researchers who have studied wheat closely, I don't find the "modern wheat" hypothesis very convincing. We have modern broccol...

I recently gave blood to the Red Cross. I had moderate iron levels. I asked about folks with "high" iron levels. The nurse said she barely ever sees anyone with too much iron in their blood. Any thoughts on this? Before you give blood they only test your hemoglobin. They don't test ferritin levels....

If you use All-Clad, you actually are cooking on a stainless steel that's 10% nickel. I trust your knowledge of metals. The French copper pans are great too, but they are traditionally lined with tin.  I am sure there are studies about tin toxicity. I didn't look particularly hard (since I don't have copper cookware) but I never came across anything that terrible about tin-lined copper cookware. I think it was proba...

Re: Iron is Toxic, Very Toxic -- Avoid At All Costs!

Just a quick correction here: the kind of stainless steel that a magnet sticks to is not the expensive stuff Hmm.. I know nothing about metallurgy, but I suspect you can tell a pan that leaches by the taste. The reason why the French don't typically like to deglaze on exposed cast-iron is because i...
