As far as what percentage for paper vs. Physical, my gut is that paper is very risky and the counterparty risk is not worth any convenience. Start with gold funds - that have narrower spreads, then when the portfolio has made reasonable gains use some of that 'other peoples money' to convert some of funds over to physical - that have wider spreads. Keep some of both, funds for rebalancing, core physical gold that is rarely if ever traded.

I think gold and bitcoin are stores of value. Gold, paintings by a favored dead artist, etc. are finite/scarce and as such tend to store value. Many firms hedge their foreign currency exposure. Stocks in other countries might be at a different phase in their economic cycle. Adding in stock + FX factors in place of just stock factor alone is paramount to adding more gold exposure, might adjust from 25 each in stock and gold to more like 16/3...
